We're looking for a skilled Sushi Chef with experience in hand-pressed sushi preparation for our establishment.

工作時間 / Hours: 9 working hours per day

Prepare and craft hand-pressed nigiri sushi with precision, consistency and artistic flair, meeting established quality standards
Maintain proper knife skills and techniques for slicing and preparing sushi-grade fish and ingredients
Prepare and maintain sushi rice at the correct temperature, seasoning and consistency
Ensure all sushi preparations comply with food safety, hygiene and sanitation regulations
Work efficiently during service periods to meet guest orders and maintain table turnover times
Manage inventory of sushi ingredients, monitor stock levels and communicate ordering needs
Maintain a clean, organized and efficient sushi preparation station
Adapt to menu changes and create special sushi offerings as required

Minimum 3 years of professional experience as a sushi chef, with substantial expertise in nigiri (hand-pressed sushi) preparation
Formal training or apprenticeship in traditional Japanese sushi-making techniques
Advanced knife skills and proficiency in fish preparation and portioning
Deep knowledge of sushi-grade fish varieties, their characteristics, sourcing and seasonal availability
Understanding of Japanese culinary traditions, sushi etiquette and presentation standards
Strong time management and ability to work efficiently under pressure during service periods
Knowledge of food safety, hygiene standards and HACCP principles
Ability to work collaboratively as part of a kitchen team
Fluency in Japanese, Cantonese, or English is advantageous for communication with team members and guests
Willingness to mentor and support junior kitchen staff
